Red Bean kuih 紅豆年糕

紅豆年糕





The Red Bean Rice Cake is very easy to make but requires a lot of time in preparing the red bean. The red bean has to be soaked in water at least two hours (preferably overnight) and steamed for at least 40 minutes. This is to make sure they are softened but not mushy. To sweeten the red bean, add 1 oz of granulated sugar after it is softened. The recipe calls for 1/2 cup of red bean.

Ingredient:
1 cup All pupose flour
2 tbsp custard powder
1 tsp baking powder
1 tsp oil
11/2 cup red bean
2 1/2 cup glutinous rice flour
1 cup granulated sugar
1 plastic paper

1. add the sugar and water into mixing bowl and stir it.
2. slowly add in the glutinous rice flour and mix well until the mixture begins to come together and form a dough .
3. add in red bean into mixture and mix well .
4. pour batter into plastic paper and moved into pots to steam with high heat for 10 minutes.
5. after that use low heat to steam for 50 mins and turn off and then simmered 5 minutes.
6. add in all purpose flour, custard powder, baking powder plus 1 cup of water and mix thoroughly, then add in oil. mix well to become batter.
7. cut the rice cake and coated with flour mixture.
8. Heat oil in fryer or skillet at medium heat.When oil is hot enough,flick some flour into it to test the temperature.When you see the flour mixture curl,that mean the oil is hot enough..
8. Slowly place the coated nian gao into the heated oil,do not over crowded or top each of the sandwich nian gao.Reduce the heat to medium, fry the cake each side for 5-8 minutes each side or until lightly brown..
9. Use a tong or chop stick to remove the cooked nian gao to a paper towel to absorb the grease.

材料:
低筋麵粉1杯
蛋黃粉2大匙
泡打粉1小匙
沙拉油1小匙
玻璃紙1張
蜜紅豆1又1/2杯
糯米粉2又1/2杯
金砂糖1杯

做法:
1.1杯金砂糖加入1杯水調勻,再陸續加入糯米粉、蜜紅豆並且拌勻。
2.將粉漿倒入鋪好玻璃紙的模型中,移入蒸鍋中用大火蒸10分鐘。
3.再轉小火蒸50分鐘至熟透,熄火後再燜5分鐘後,即可取出放涼。
4.將低筋麵粉、蛋黃粉、泡打粉加1杯水調勻,加入沙拉油拌勻作成粉漿。
5.年糕切塊沾裹粉漿,放入油鍋中慢慢炸至外殼金黃酥脆,撈出瀝乾多餘的油份即可。


※廚師的叮嚀:
*喜歡吃甜度高一點的人,可以把糖的份量增加,不過這樣蒸的時間也就需要長一點。
*沒有蒸籠的人可以用一張厚紙版為成圓形來代替,只要紙板有高度而且蒸的時候不會塌掉就可以了。
*在蒸年糕的過程當中,蒸鍋的水量可以多放一點,如果要在中途加水的話,一定要加熱水,以免因為蒸鍋溫度的降低而影響了年糕的外型。
*蒸年糕的時候要將年糕完全蒸熟才能取出,否則拿出來之後發現年糕不熟再回蒸就永遠不會熟了。
*要測試年糕熟了沒有,可以用筷子插一下年糕,如果筷子取出來時還有粉漿沾黏的話就表示年糕還沒有熟。
